L’objectif de ce film est de montrer la diversité de l’agro-ressource que représente le châtaignier et la castanéiculture. La châtaigneraie est un milieu original, totalement anthropisé et avec sa propre écologie. Ce film montre différents systèmes de production en Aveyron, dans le Tarn et le Tarn et Garonne, ainsi que dans le Var, où la vieille châtaigneraie du Massif des Maures a été relancée par rénovation dans les années 70 et sert aujourd'hui d'outil de production (surtout pour l'élaboration de confiture de châtaignes) mais aussi de rempart protecteur contre les incendies. Dans d’autres secteurs, elle est fortement abandonnée, voire en péril.
Le châtaignier, l' "arbre à pain", a joué dans les zones de moyenne montagne de Midi-Pyrénées un rôle primordial dans les sociétés rurales. Il constituait, avec le seigle, une des bases de l'alimentation humaine et animale. Le châtaignier a ainsi sauvé de la famine bien des habitants misérables pendant les périodes de disette.
Pour préserver la diversité des variétés de châtaignes sélectionnées au fil du temps, en Aveyron, à Rignac, a été créé un Conservatoire qui préserve aujourd’hui une soixantaine de ces variétés locales.
